I love Avocados, but I’ve never been really one to try them in my desserts. I’ll have avo on toast, guacamole and even just eat it straight with a spoon any day. But Avocado and sweets?… no thanks.My daughter has always loved Avocados from when she was a baby. She still eats them as a snack and has just started asking me to drizzle some honey on her avocados, something she saw her Nanabapa doing one day, she tried it and loved it!

I love eggs. I mean really, I could eat them for breakfast any day, and I usually do! Gimme eggs any way, scrambled, sunny side and omelets are all my faves. But with busy mornings, and trying to get the kids ready and out the door for school, it’s not as easy to sit and enjoy my eggs in the am. When I saw this recipe, it seemed like a great way to make breakfast ahead of time and make sure it was a hearty and nutritious one ;)
