It’s a great alternative to pasta and can be done in a variety of different way;) Firstly, you can made zoodles (noodles made from zucchini) a few different ways. The most basic way is to use a good old peeler, just peel the zucchini into thin strips. There are also more fancy tools you can use like a spiralizer or hand held spiralizer (like the one I used).
This beautiful salad is a nice change from the many other salads I have in my rotation. It's simple and clean, and with just a few ingredients, each one gets to shine through. And the combination of pomegranate & goat cheese with the pop of herbs in the dressing is oh so yum ;)

This salad is a staple in our house. It is fresh and filling, packed with healthy nutrients (including a great amount of protein from the quinoa and chick peas) and goes with just about everything. It has lemon, lime and a nice mix of herbs.
