Cumin Lentil Soup

Fall is just around the corner, and you can already feel the air getting a bit cooler. I was craving something warm but not too heavy and this soup hit the spot perfectly.  It’s simple to make and a yummy recipe that the whole family enjoys. I love the taste of the cumin and the little hints of ginger. I like topping my bowl with a splash of fresh lime juice and fresh coriander.  Ingredients 3 tbsp Olive Oil 1 medium Onion, chopped 2 Carrots, chopped 1 large Zucchini, chopped 2 cloves Garlic, minced 1 inch Ginger, grated 2 tbsp Cumin Salt Pepper 1 ½ cups Red Lentils, (soaked in water, discard water and rinse before adding to soup.Around 10 mins)...

Coconut Curry Lentil Soup

If you are looking for something hearty, healthy and filled with flavour, then this soup is for you. The coconut and spice combination will leave your house smelling absolutely delicious. What you'll need: 1 tbsp, Coconut Oil (or Olive Oil) 1 large Onion, chopped 3 cloves Garlic, minced 2 tbsp fresh Ginger, minced 2 tbsp Tomato Paste 2 tbsp Curry Powder ½ tsp Hot Red Pepper Flakes 5 cups Vegetable/Chicken Broth 400ml can Coconut Milk 1 cup Fresh Tomatoes, chopped 1.5 cups Dry Red Lentils 2-3 handfuls, Chopped Kale or Spinach Salt and Pepper, to taste juice of half a Lemon chopped Fresh Coriander and a dollop of Sour Cream or Yogurt (to top)  Method:In a stockpot, heat the coconut oil...

Citrus Curry Lentil Soup

It’s really hard to not fall in love with Morocco. From the intoxicating sights, sounds and smells of the bustling souks, the beautiful decor and amazing textiles (I literally wanted to cram every rug back in my suitcase to take home with me!) to the warm hospitality of the people, it really feels like you’ve been transported to a completely different world.  As we travelled the country exploring the ancient cities, epic mountain ranges and sweeping deserts, one constant was the delicious, rich and hearty foods and I especially fell in love with their lentil soups.

Butternut Squash and Pear Soup

Fall is in full swing and I’ve got soup on my mind. This roasted Butternut Squash and Pear Soup is a perfect mix of full rich flavour with a little bit of sweet. I’ve made it a few times this season already and it hits the spot each and every time.  It’s also a win with Zee and the kids like to dunk their grill cheese sandwiches in it;)
