One Pot Pasta - by Ahmed

Pasta is one of my favourite dishes. I was really excited to make this recipe because I had never tried it before. I thought it would either turn out really good or really bad, mine turned out really good and I hope yours does too. Hope you enjoy my new recipe.

Ingredients

  • 400g Spaghetti

  • ¾ cup Cherry Tomatoes, sliced in half or 2 full tomatoes

  • 1 cup Baby Spinach Leaves

  • 1 Onion, small, finely sliced

  • 3 cloves Garlic, finely sliced

  • 1 large handful of Basil leaves, roughly chopped

  • Salt and Pepper

  • 2-3 tsp Red Pepper Flakes

  • 2 tbsp Extra Virgin Olive Oil

  • 1 can of Crushed Tomatoes (796 ml)

  • 2.5 cups Water

  • Lemon Zest

  • Lots of Parmesan Cheese, grated

Method

  1. Chop onions, cut tomatoes, sliced garlic, roughly chop spinach and basil.

  2. In a large pan put the spaghetti in the centre of the pan and arrange the tomatoes, spinach, basil, onion and garlic around and beside the pasta.

  3. Pour in the olive oil and spices. 

  4. Cover ingredients with canned tomatoes and water.  

  5. Place the pan over a medium-high heat and start breaking the tomatoes. 

  6. Using tongs, stir the pasta regularly and cook for about 15 minutes until it’s cooked and the liquid has nearly evaporated creating a sauce.

  7. Remove the pan from heat and stir in the lemon zest, parmesan cheese and some fresh basil. 


Serves Approx. 6 people
