"Kid Approved" Salmon Patties

I’ll admit it, I’ve got it pretty good when it comes to my kids being good eaters. They’re not super picky (in fact, they're pretty adventurous), they eat a wide range of veggies and both of them could literally eat fruit all day! They also enjoy a lot of the healthy meals I cook for them… with one exception... I've found it a bit of a challenge to get them to eat and love fish.  I mean, don’t get me wrong, they’ll gobble down fish & chips and they’ll even try a small piece of salmon now and then, but a number of my fish meals have been greeted by some impossibly huge eye-rolls.  ;)

While I love fish myself, I understand where they’re coming from because this wasn’t always the case for me either.  Fish (and seafood in general) is an acquired taste, and so my hope is that with more exposure their little tastebuds will soon get more and more used to it, and hopefully they’ll become big fans of fish (just like Mama!)

In the meantime, though I've been trying out some different fish recipes and put my team of tiny taste testers to work.  This Salmon Pattie recipe recently got a thumbs up from both of them, so it’s been added to our regular rotation.  That makes me a happy mama because it lets them get in those healthy omega-3 fats that are oh-so-good for their growing bodies and developing brains.

Here’s what you’ll need

Salmon Marinade

  • Salmon (6 oz piece)  

  • 1 tbsp, Grainy Mustard

  • ½ tsp, Honey

  • 1 small clove, Garlic (minced)

  • 2 tbsp, Olive Oil

Pattie Mixture:

  • ¼ cup, Chopped Coriander (or Parsley)
  • ½ Zucchini, finely shredded (squeeze out any excess water)
  • 1 Egg
  • 1 tbsp, Mayonnaise
  • 2 teaspoons, fresh Lemon Juice
  • 1 teaspoon, Lemon Zest
  • 1 small-to-medium, Potato (boiled, peeled and grated)
  • Salt & Pepper, to taste
  • 1 cup, Almond Meal (can find at grocery stores or bulk food stores)
  • Oil for frying (I like to use coconut oil)

(makes 8-10 patties)

Method

Marinate salmon for at least an hour

Heat skillet over medium-high, place Salmon (skin-side down) and cook for 1-2 minutes

Place lid over Salmon, and cook for another 5-7 minutes until Salmon is cooked through

Remove off heat, set aside, and let cool

In a large bowl, add cooled salmon and flake with a fork into small pieces. Add in chopped coriander, drained shredded zucchini, egg, mayonnaise, lemon juice, lemon zest, cooked potato, and salt and pepper to taste.

Mix all the ingredients together until well combined. Wet hands slightly and separate mixture into equal parts. Depending on the size of your salmon piece, you should be able to make 8-10 hockey-puck sized patties. Set patties aside.

Heat a large frying pan (over medium heat) and place enough coconut oil to coat the bottom of the pan.

Pour almond meal out flat onto a large plate.  Take patties one-by-one and place them onto the almond meal layer to coat both sides of the pattie.  

Add the coated patties into the pan with coconut oil.  Cook patties on each side for about 3 mins, or until the almond meal coating starts to turn golden brown. Place cooked patties on a plate covered with some paper towel to soak up excess oil.

Serve patties with salad or sweet potato fries. The kids like it with some cut up veggies, a little ketchup and tartar sauce   ;)
