Saffron Chicken

The longer you let this chicken marinate the better it is. This tangy, flavourful saffron chicken is great for meal prep and can be eaten in so many different ways. Have it with rice, salad or in a wrap with some hummus, parsley and taziki. We love Persian food at home and this chicken is definetly a fav!

What you'll need:

  • ½ Chicken Breast, boneless & skinless

  • 2 Onions, sliced thinly

  • ½ tsp of Saffron (hand grind and soak in 2 tbsp of hot water)

  • ½ cup Plain Yogurt

  • 2 tbsp Extra Virgin Olive Oil

  • 2 cloves of Garlic, crushed

  • 1½ tsp Salt

  • 1½ tsp Ground Black Pepper

  • 3 tbsp Unsalted Butter

  • ¼ cup Fresh Lemon Juice

Method:

Marinate chicken with all ingredients except for the butter, lemon juice and saffron. Let marinated chicken sit for 6-8 hrs (up to 2 days) in the refrigerator.

Once ready to cook, thread chicken pieces through a skewer, 5-7 pieces per skewer. In a small pan, cook butter, lemon juice and saffron mixture until thickened. Place chicken skewers on a hot barbecue and grill on each side for 5-7 mins. Coat chicken with lemon mixture while cooking.

Remove chicken from grill and let rest for a few minutes to allow the juices to settle. Serve with a filling salad or a side of roasted Veggies.
