Zoodles with avocado pesto and mustard salmon

Have you tried zoodles yet?

I’ve been making them quite a bit more recently. It’s a great alternative to pasta and can be done in a variety of different way;) Firstly, you can made zoodles (noodles made from zucchini) a few different ways. The most basic way is to use a good old peeler, just peel the zucchini into thin strips. There are also more fancy tools you can use like a spiralizer or hand held spiralizer (like the one I used).

In this recipe I mixed the zoodles in with a yummy creamy avocado pesto. It adds so much flavor and richness to the zoodles.

Zoodles

  • Spiralize two medium sized zucchinis in a large bowl and set aside.

Avocado Pesto

  • 1 ½ large ripe avocado
  • 1-2 tsp olive oil
  • Juice of half a lemon
  • 1 clove of garlic
  • Pinch of salt and pepper
  • ¼ cup coriander
  • ¼ cup fresh mint
  • water ( depending on thickness)

Place all the ingredients except for the water in a blender or food processor; mix till everything is well blended. Check to see if it has reached a nice smooth consistency, add water in small amounts to reached desired consistency. Mix zoodles with avocado pesto, toss to make sure the zoodles are coated well.

You can top eat this on its; own or top it with just a bout anything. Shrimp, chicken, meat balls or fish. I topped mine with some delicious honey mustard salmon.

 Honey Mustard Salmon

  • 3 portions of salmon with skin removed
  • 2 tsps grainy mustard
  • 1 tsp honey
  • 2 tbs lemon juice
  • 1/2 tsp red chilli flakes
  • 3 tbs of chopped herbs ( coriander or parsley)
  • salt and pepper to taste

Set salmon aside. In a bowl ,mix all the ingredients until well combined. Coat each side of the salmon with the mixture and place in a baking dish. Broil in oven for 5-7 minutes and flip salmon to cook for another 4-5 minutes on the other side. Place cooked Salmon over zoodles with avocado pesto and Enjoy!
