Citrus Curry Lentil Soup

It’s really hard to not fall in love with Morocco. From the intoxicating sights, sounds and smells of the bustling souks, the beautiful decor and amazing textiles (I literally wanted to cram every rug back in my suitcase to take home with me!) to the warm hospitality of the people, it really feels like you’ve been transported to a completely different world.  As we travelled the country exploring the ancient cities, epic mountain ranges and sweeping deserts, one constant was the delicious, rich and hearty foods and I especially fell in love with their lentil soups.

Suhoor, done right

Yup, you know what time it is!!  Ramadhan is only a few weeks away, and while we’re all preparing mentally and spiritually for this blessed month, it’s just as important to prepare physically.  One of the questions I’m most commonly asked every year is about what to eat come Suhoor-time, so I’d like to share some of my tips to help you take the guesswork out of your meal planning.

Zoodles with Creamy Avocado Pesto and Salmon

Zoodles with avocado pesto and mustard salmonHave you tried zoodles yet?I’ve been making them quite a bit more recently. It’s a great alternative to pasta and can be done in a variety of different way;) Firstly, you can made zoodles (noodles made from zucchini) a few different ways. The most basic way is to use a good old peeler, just peel the zucchini into thin strips. There are also more fancy tools you can use like a spiralizer or hand held spiralizer (like the one I used).
